OVERVIEW

A recent study compared the biochemical composition of a fatty "Western" diet, with healthful Fish/Rice-centric and Vegan alternatives. The samples were extensively fractionated and analyzed for metabolites and lipids using high resolution Orbitrap LC-MS, GC-MS, and IC-MS (ion chromatography - mass spectrometry). Thousands of components were identified including general markers of "healthy" diet, many unique compounds from specific menu ingredients, and some surprising exogenous compounds and contaminants.

This webinar will discuss the comprehensive analytical approach that was chosen, a strategy for integration of the many diverse data sets, methods for statistical analysis and a definitive tool set for unambiguous compound identification.

KEY LEARNING OBJECTIVES:

- Food analysis is complex and requires multiple metabolomics and lipidomics platforms

- High resolution accurate mass with Orbitrap platforms provides higher confidence in results

- Untargeted profiling provides a wealth of information on metabolites and lipids

- Identification and differential analysis is straightforward with new software tools

WHO SHOULD ATTEND
  • • Scientists who are interested in adding new metabolomics or lipidomics capabilities
  •
  • • Anyone interested in applying metabolomics and lipidomics technologies to food science
  •
  • • Laboratories already engaged in metabolomics and lipidomics
  •
