Phytolon, Ginkgo target natural food colors

Phytolon is producing natural colors via yeast fermentation.

The Israeli start-up Phytolon has picked the synthetic biology company Ginkgo Bioworks to help it scale up production of natural food colors. Phytolon says it has developed a process for making betalain pigments via yeast fermentation. Ginkgo will use its cell-programming skills to help Phytolon maximize the efficiency of purple and yellow betalain-producing strains.
